Wedding cheesecake






Avocado Lime No Bake Cheesecake
Crust:
1 to 2 packages of graham crackers or gingersnap cookies
1 stick butter (melted)
Filling:
1  tsp plain gelatin
1/4 cup water (might need a little more)
2 ripe avocado
3 8 oz blocks of softened cream cheese
1/2 cup sugar
1 cup plain 0% greek yogurt
zest from 2 to 3 limes
juice from 2 to 3 limes
Crush cookies of choice. Melt butter and stir in cookies crumbs. Press in spring form pan and along the sides about an inch or so up.
Place water over medium heat in sauce pan. Stir in gelatin, let sit while preparing other filling ingredients.
Place avocado, cream cheese, sugar until evenly blended with mixer. Blend in greek yogurt. 
Zest in lime and squeeze lime juice and blend. Feel free to add more lime juice for taste, but not too much, you still want that avocado flavor.
Blend in gelatin from pan. 
Divide into spring form pan place in fridge for 4 to 6 hours or overnight.

Veggie soup topped with Quinoa & Kale

Veggie Soup Topped with Quinioa

Soup ingredients
1/2 head cauliflower
4 stalks celery chopped 
1/2 large white onion chopped
1/2 sweet red pepper chopped
1 clove garlic minced
6 leaves fresh basil
2 tsp dried oregano 
1 tsp ground thymes leaves
2 - 3 tsp sea salt
1 tsp fresh black pepper
2 tbls olive oil
1 14 oz can vegetable or chicken broth plus 1/4 cup water

Toppings:
Kale
Roma tomato
1 cup dried Quinoa (prepare as states on package)

Heat 1 tbls  olive oil in large stockpot. Toss in celery and onion cook about 10 minutes, until translucent and starting to brown. Stir once in awhile. 
Add the other tbls of olive oil red pepper, cauliflower, garlic and kale. Cook for about 7 minutes. Add broth and water. 
Reduce heat to simmer and add seasonings. Cook for about 5 - 10 minutes.

Pour soup in bowl, top with 1/4 cup quinoa, 1 thick slice of Roma tomato cut into pieces and a few sprinkles of chopped kale.

Roasted tastiness

Last night I roasted Brussels's Sprouts and Cauliflower. Wow, was it good.

Brussels's Sprouts
12 sprouts
3-4 tbls olive oil
5-6 dashes of red pepper
1/4 - 1/2 tsp sea salt
1 - 2 cloves minced garlic
1/2 tsp dried basil
2 - 3 tbls white onion minces
1 Roma tomato cut in desired size chunks

Preheat oven to 450.
Clean sprouts, cut in quarters. Toss in medium bowl, coat with olive oil. Add the rest of the ingredients and mix well.

Spread evenly on pan.

Bake for 30 minutes

Cauliflower
Preheat oven to 450. Cut or pull a part into chunks. Dash desired amount of red pepper.
Spread evenly on pan bake for 30 minutes. It's okay if the top of the cauliflower turns dark. It's good that way. :)

I dip pieces in mustard, BBQ sauce and Buffalo sauce.

Nutella cheesecake

Crust
1 package graham crackers
1/4 cup melted butter
1 tsp sugar

Filling
3 8 oz packages cream cheese at room temp.
1/2-3/4 cup sugar
1 tsp pure vanilla extract
1 Tbls whole wheat flour
1/4 cup almond milk
1/8-1/4 cup Nutella
3 slightly beaten eggs

Preheat oven to 375. Crush graham crackers and add melted butter. Spread crust evenly in spring form pan & top with sugar. Set aside.

Beat cream cheese, sugar, flour, & vanilla until few cream cheese chunks are seen.
Add milk until smooth. Add Nutella until mixed evenly.
Stir in eggs until well blended.

Pour over graham crackers.
Bake 40 minutes or until 2 inches of filling from the outside of the pan is set.

Let cool for 30 minutes.
Separate edges with sharp knife.
Undo spring form and let cool for 45 more minutes.
Put in fridge for 4-5 hours or overnight.

Spicy sweet potato fries

1 sweet potato
1/2 tsp sea salt
3-5 dashes of red pepper
1/4 tsp dried basil
1-2 tsp brown sugar
1/8 cup olive oil
Few dashes of pumpkin pie spice

Preheat oven to 450.
Cut sweet potatoes into fry shapes.
Toss all ingredient in bowl and cover and shake until evenly coated. Spread evenly on baking sheet. Bake for 20-30 minutes. I burnt my a little cause unlike the taste with the brown sugar.

Mini Cauliflower crust pizzas




 Mini Cauliflower Crust Pizza

Ingredients:
1/2 head cauliflower
1 clove garlic
1 beaten egg (or you can just beat it right in with the rice)
1 cup mozzarella cheese
4 to 5 leaves of fresh basil (1-2 tsp basil)
1 tsp orgenano
2 to 4 tbls white onion minced

Various toppings I used:
Mozzarella cheese
Kale
Roma tomatoes
Roasted Red Pepper Hummus
Artichokes
White Onion
Avocado
Green Olives

Directoins
Preheat oven to 450.
Cut all leaves and stems off cauliflower. Toss in food processor until it looks like rice. 
Heat frying pan to medium heat, toss in Cauliflower and 2 to 4 tbls minced white onion. Cook until ingredients are translucent, about 6-8 minutes. 

Mix cauliflowers and the rest of the ingredients (no toppings yet) into a bowl. 
Grease pan or pizza stone. The crust stuff sticks to the pan really well. 

Shape pizza into desired sizes and shapes. I did six thin pieces. 
Bake for 20-25 minutes. 

Heat oven to Broil. 
Add desired toppings. 
Broil for 5 minutes.

Single serving Tomato basil soup & tortilla grilled cheese


I really enjoyed this last night. I was craving cheese and tomatoes and I didn't want it all in one bite, but several tasty ones. It's a simple recipe but so so good.

Tomato soup

2 Roma tomatoes diced
4 fresh basil leaves minced
1/8 tsp garlic powder or one small garlic clove
1/8 tsp pepper
1/2 tsp sea salt
Dash of ground red pepper

 Puree tomatoes in magic bullet. Toss in small sauce pan. Add all ingredients and cook on low for 20 minutes.
Taste and add more spices if needed.
Cook for another 10 minutes

Tortilla grilled cheese

1 small whole wheat tortilla
butter
2 slices of white American cheese (or cheese of choice)

Preheat stove top to medium head and place pan on to warm up. 
Spread a very thin layer of butter over tortilla. Place tortilla on pan butter side down. Layer cheese on one half of tortilla and fold over. Heat until tortilla is crispy and cheese is melted. I cute the Tortilla in half as well.
