Inspiration
Losing inspiration sucks, what's worse is losing yourself along with it.
Thanks goodness for books and websites of those that are daily views of constant inspiration.
I just need to suck it up and go for it! Go for everything I've dreamed and yearned to be exactly who I am.

Portobello Stir Fry Wraps
2 large portobello caps
6, 1" inch cubes of firm Tofu
1.5 Tbls soy sauce
1.5 Tbls balsamic vinegar
1 large minces garlic clove
1/16 tsp ground ginger
Pepper to taste
Mix all ingredients together. Pour all ingredients over mushrooms & tofu. Marinate for 1 hour.
Meanwhile cut the following into long slices
1/2 large green pepper
1 mini sweet red pepper
1 mini sweet yellow pepper
1/4 cup white or red onion
Heat heat pan to medium.
Cut mushroom into long 1/2 thick pieces, toss in hot pan. Toss tofu and veggies in pan and pour excess marinade into pan over veggies & tofu. Cook for 5 to 7 minutes.
I used large spinach tortillas so I can make them into a wrap without making a mess. Otherwise small tortillas work to make tacos.
I then tosses some romaine lettuce, hot salsa, Tabasco green sauce & pepper jack cheese on top.

Stuffed Green & Purple Peppers
Stuff Peppers
Cut two large peppers in half, remove all ribs and seeds.
In a medium bowl, combine about two cups of your favorite veggies. I used, sweet red & yellow peppers, white onion, cherry tomatoes, carrots, cauliflower, chopped fresh spinach & a few other I can't remeber.
So here ya go:
Preheat oven to 350 degrees.
Season with:
1 tsp sea salt
1/2 tsp fresh cracked pepper
1 tsp cayenne pepper
4 leaves of fresh basil minced
4 Tbls parsley minced
2 Tbls lemon juice
2 garlic cloves minced
3 to 4 Tbls extra virgin olive oil
2 Tbls water
Taste add more seasoning if needed.
mix in 1.5 cups of quick cooking couscous.
Set the peppers on greased foil on cookie sheet. Stuff with filling and cook for 30 minutes.

Tomato Open Face Sandwich with Roasted Eggplant & Feta Spread
Tomato Open Face Sandwich with Roasted Eggplant & Feta Spread
(and a side of pan fried asparagus)
Wow was this amazing. I was full halfway through the meal, you I couldn't stop eating it!
Prepare the Roasted Eggplant & Feta spread first, then we'll get to the sandwich.
Roasted Eggplant & Feta Spread
1 medium eggplant (approx. 1 lb)
2 TBLS lemon juice
1/4 cup extra-virgin olive oil
1/2 to 3/4 cup crumbled feta cheese
1/2 chopped red onion
1 small red bell pepper or 3 to 4 mini sweet red peppers, finely chopped
1/8 cup fresh cilantro minced
1/4 jalapeno pepper with seeds, minced
2 TBLS fresh or dried basil
1 TBL cayanne pepper
1/4 tsp sea salt
Directions:
Cut eggplant in half. Place pieces on greases foil lined backing sheet skin side up. Flip every 5 minutes, until skin looks charred or feels crunchy. Broil 15 to 20 minutes. Transfer to cutting board to cool.
Put lemon juice in a medium bowl. Scoop insides of the eggplant into the bowl and toss with lemon juice. Add oil and stir with fork until oil is absorbed. Keep consistency chunky.
Stir in onion, red pepper, jalapeno, basil, cilantro, cayenne, and salt. Add feta.
Enjoy with Pita chips
OR
Toast a piece of your favorite bread. Spread Roasted Eggplant Spread on toast, layer with roma or heirloom tomatoes. Drizzle with olive oil. Dash some basil & oregeno and add desired amount of crumbled feta. I eat it with a fork.

Veggie person
So I've decided to go vegetarian for health reasons alone. I watched Forks Over Knives and it's really opened up my mind.
It's been about 2 or 3 weeks. I've had about a handful of meals with meat in them mostly because I was craving it. I will for sure me staying away from pork and beef, which I pretty much had before. High quality wild lean meats will be what I choose if I do.
